Managing around 15 hectares of sustainably farmed vines (certified HVE Level 3 for high environmental value), the estate treats its ancient, fossil-rich Kimmeridgian limestone and clay soils like a national treasure. Sylvain avoids heavy handed winemaking, opting to ferment and age his village-level Chablis entirely in temperature-controlled stainless steel vats on its fine lees.
